Role Overview

The Food Innovation & Development Executive is responsible for leading product development initiatives across a diverse portfolio of health and wellness food products. The role involves formulation, experimentation, pilot-scale trials, and coordination with external partners to bring products from concept to commercialization while ensuring quality and regulatory compliance.

Key Responsibilities

  • Lead formulation and optimization of products across categories such as energy bars, mixes, snacks, confectionery, dairy, and ready-to-eat/drink formats
  • Design, execute, and document laboratory and pilot-scale trials for various products including cookies, herbal teas, honey variants, chocolates, and instant mixes
  • Coordinate with co-packers, suppliers, incubation centers, and laboratories to ensure timely delivery and process alignment
  • Plan and conduct sensory evaluations (internal panels and limited consumer trials) and translate feedback into product improvements
  • Ensure adherence to clean-label standards, FSSAI regulations, and perform basic shelf-life evaluations
  • Prepare and hand over commercial-ready documentation including formulation sheets, process flows, and trial reports
  • Travel frequently to manufacturing plants, co-packers, and farms for trials, commissioning, and troubleshooting

Candidate Profile

The ideal candidate is hands-on, detail-oriented, and experienced in food product development with the ability to translate concepts into scalable commercial products.

Skills & Competencies

  • Experience across 2–3 product segments such as bakery, snacks, traditional mixes, confectionery, beverages, health foods, or dairy
  • Strong foundation in food science including cereals, millets, fats, sugars and alternatives, nuts, seeds, herbs, and functional ingredients
  • Practical knowledge of processing techniques such as mixing, roasting, extrusion, baking, milling, dehydration, and filling
  • Ability to design lab trials and scale them to pilot and commercial production
  • Experience in basic analytical testing (moisture, fat, microbiology) and result interpretation
  • Knowledge of clean-label product development and natural sweeteners
  • Experience adapting recipes into stable RTÉ (Ready-to-Eat), RTS (Ready-to-Serve), and RTD (Ready-to-Drink) formats
  • Familiarity with sensory evaluation techniques (hedonic testing, triangle tests, benchmarking)
  • Strong documentation and data analysis skills (spreadsheet proficiency)
  • Understanding of regulatory requirements, particularly FSSAI

Additional Requirements

  • Willingness to travel frequently for on-site product trials and coordination
