Education:

Bachelor’s or Master’s degree in Microbiology, Brewing Science, Biotechnology, or Biochemistry.

Key Responsibilities:

1. Microbiological Quality Assurance

  • Conduct microbiological testing on raw materials, wort, beer, yeast, and packaging samples.
  • Identify and quantify yeast and bacterial populations using plating and microscopy.
  • Perform contamination screening at key process points.

2. Yeast Management & Fermentation Health

  • Monitor yeast vitality, viability, and fermentation performance.
  • Maintain aseptic yeast cultures and storage conditions.
  • Advise brewers on pitching rates, yeast reuse, and contamination prevention.

3. Process Hygiene & Sanitation Verification

  • Conduct environmental swabs to verify cleanliness and sanitation.
  • Validate CIP (Clean-in-Place) and SIP (Sterilize-in-Place) processes.
  • Collaborate with the brewing team to implement microbiological best practices.

4. Product Quality & Stability

  • Support sensory and analytical evaluations by linking microbiological data with flavor and stability.
  • Investigate microbial causes behind off-flavors, haze, or spoilage.
  • Participate in root cause analysis for product deviations.

5. Documentation & Compliance

  • Maintain precise laboratory records and microbiological trend reports.
  • Ensure compliance with FSSAI, ISO 22000, and other regulatory standards.
  • Present quality insights to management teams.

6. Continuous Improvement & Innovation

  • Collaborate on new recipe trials and yeast performance studies.
  • Enhance microbiological testing methods and lab procedures.
  • Train brewing staff on contamination prevention and hygienic practices.

Experience:

  • 2–6 years in a brewery, beverage, or fermentation-based industry (craft brewing preferred).
  • Proven experience in yeast management, microbial testing, and hygiene validation.

Technical Knowledge:

  • Expertise in aseptic techniques, plating, and microscopy.
  • Understanding of brewing microbiota and fermentation kinetics.
  • Knowledge of beer chemistry and quality documentation systems.
