Position Overview:
Aamikza Biotechnology is seeking a highly skilled and motivated Fermentation Scientist specializing in dairy starter cultures to join our innovative team in Baramati, Pune. The successful candidate will play a key role in developing and optimizing microbial fermentation processes focused on the cultivation and application of lactic acid bacteria for dairy fermentation. This is a unique opportunity to contribute to sustainable food biotechnology in a supportive and forward-thinking environment.
Key Responsibilities:
- Design, execute, and analyze lab-scale fermentation experiments involving lactic acid bacteria (LAB) to optimize growth performance, acidification profiles, etc.
- Develop scalable and reproducible fermentation protocols for the production of high-quality dairy starter cultures.
- Experience of large-scale bioreactor operation is expected.
- Collaborate closely with downstream processing, quality control, and analytical teams to ensure seamless process integration.
- Monitor critical fermentation parameters (pH, temperature, dissolved oxygen, etc.) and troubleshoot deviations in microbial performance.
- Implement novel strategies such as co-culture systems, adaptive evolution, or prebiotic supplementation to improve starter culture robustness and functionality.
- Maintain detailed and accurate records of experimental data, and present results to R&D leadership and other stakeholders.
- Stay informed of emerging trends in dairy fermentation, microbial biotechnology, and process optimization.
Qualifications:
- Master’s degree in Microbiology, Dairy Science, Biochemical Engineering, or a closely related field.
- Minimum of 2 years of experience in microbial fermentation, ideally involving lactic acid bacteria or dairy fermentations.
- Strong understanding of microbial physiology, metabolic pathways of LAB, and industrial starter culture development.
- Hands-on experience with bioreactors, fermenters, and process monitoring systems.
- Familiarity with aseptic techniques and microbial quality assurance standards.
