Position Overview:

Aamikza Biotechnology Pvt. Ltd. is looking for a proactive and dedicated Junior Fermentation Scientist to join our R&D division, focusing on the development of dairy starter cultures. This role is ideal for recent graduates or early-career professionals with hands-on experience in microbial fermentation, especially with lactic acid bacteria (LAB). You will be involved in both lab-scale and pilot-scale fermentation operations, contributing to process development, optimization, and scale-up.

Key Responsibilities:

  • Plan, set up, and execute fermentation experiments using lactic acid bacteria for dairy applications.
  • Operate, monitor, and maintain laboratory-scale and pilot-scale fermenters with control over parameters like pH, temperature, agitation, and aeration.
  • Support upstream fermentation processes including media preparation, inoculum development, and sterilization protocols.
  • Assist in the scale-up of fermentation processes from bench-top reactors to pilot fermenters, ensuring reproducibility and performance.
  • Perform troubleshooting and optimization of fermentation conditions to improve yield, viability, and acidification performance of cultures.
  • Maintain detailed experimental records, logbooks, and prepare reports and presentations.
  • Collaborate with downstream, QA/QC, and analytical teams to support end-to-end starter culture development.
  • Follow and enforce aseptic techniques and safety standards in all fermentation-related operations.

Qualifications:

  • B.Tech, M.Tech, or M.Sc. in Microbiology, Dairy Technology, Food Technology, Biotechnology, or Biochemical Engineering.
  • 1–2 years of hands-on experience in microbial fermentation (industry, research project, or internship). Freshers can be part of the selection process.
  • Basic understanding of LAB physiology, dairy fermentation processes, and microbial scale-up.
  • Familiarity with fermenters/bioreactors (lab and pilot scale) and experience in setting up and cleaning CIP/SIP systems is an advantage.
  • Good working knowledge of fermentation monitoring instruments (pH, DO, temperature probes, etc.).

  • Strong documentation and data analysis skills.
  • Good interpersonal and communication abilities.
  • Eagerness to learn, work in a team, and contribute to process improvements.
  • Attention to detail and commitment to quality in microbiological work.
